Vegan blueberry-cassis lassi
Vegan blueberry-cassis lassi
Preparation
Put frozen blueberries in the blender together with Silken Tofu, water, syrup, lemon juice, sugar and a pinch of salt. Purée well, until all the berries are properly chopped and the Silken Tofu lassi has a fine, creamy texture. Alternatively, you can use a hand blender in an appropriate-sized jar.
Fill the lassi drink into glasses. Decorate with a few fresh mint leaves and straws. Serve and enjoy immediately.

We recommend
If you are using fresh blueberries, substitue half the water with ice cubes. This way, the lassi cools wonderfully and can be served immediately. If you want to prepare the lassi ahead of time, keep it cool and mix well once more before serving. The lassi will keep in the refrigerator for two days.
Try the recipe with other kinds of berries, fruits or syrups. Please note that, depending on the fruit used, the texture of the lassi may change. In this case, adjust the amount of water to get the desired texture.
