| For the tofu balls: | |
| 400 g | Tofu natur |
| 2tbsp | ground flaxseed |
| 3 | garlic cloves |
| 20 g | ginger |
| 300g | cooked adzuki beans (or kindney beans) |
| 80 g | breadcrumbs |
| 100g | Seitan fix |
| 5 tbsp | soy sauce |
| 1 tbsp | dark miso paste |
| 1 tsp | liquid smoke (if you have it) |
| 1 tsp | salt |
| 1tbsp | peanut oil |
| For the teriyaki sauce: | |
| 2 | garlic cloves |
| 1 tbsp | grated ginger |
| 6 tbsp | soy sauce |
| 4 tbsp | rice syrup |
| 1 tsp | sesame oil |
| 2 tsp | sriracha or a different chili sauce |
| 2 tbsp | starch |
| Additional ingredients: | |
| 2 tbsp | white sesame seeds |
| 2 | spring onions |
This recipe requires a food processor / blender.
For the tofu balls:
1. Preheat oven to 180 °C upper/lower heat.
2. Combine the ground flaxseed with 5 tbsp of water and set aside. Let soak for 5–10 minutes.
3. Finely grate the ginger and press the garlic.
4. Put the tofu, 2/3 of the beans, the flaxseed, breadcrumbs, Seitan Fix, ginger, garlic, soy sauce, miso paste, liquid smoke and salt in a food processor and purée.
5. Add the remaining beans and roughly purée.
6. Then form into 28 balls about the size of golf balls and place them on a baking tray lined with baking parchment. Brush with peanut oil and bake for 30 minutes on the middle oven rack. Turn halfway through baking.
For the teriyaki sauce:
1. Mix the starch with 4 tbsp of water and set aside.
2. Finely grate the garlic and ginger. Combine with 250 ml of water, soy sauce, rice syrup, sesame oil and sriracha and bring to a boil. Stir in the starch and water blend and simmer at low to medium heat for 5 minutes. Stir frequently.
3. Add the tofu balls to the sauce and let simmer for 3 minutes.
Additionally:
1. Dry roast the sesame seeds in a hot frying pan for 2–3 minutes until fragrant. Give the pan a swirl occasionally. Chop the spring onion greens into thin rings.
2. Sprinkle the sesame seeds and spring onion greens over the tofu balls and serve, for example with Japanese short-grain rice and a favorite green vegetable such as cucumbers or edamame.
