How we smoke our tofu

In the past, people smoked foods to improve shelf life, today we do it mainly for the delicious taste.

At Taifun, we rely exclusively on the friction smoking process for smoking our tofu. In the friction smoking process, smoke is produced by rubbing a metal wheel on a log of wood. The smoke produced this way is fed directly into the smoking chamber, where it coats our tofu or tofu sausages with a fine, aromatic smoky flavour.

This process enables us to significantly minimise exposure to harmful substances such as polycyclic aromatic hydrocarbons (PAHs), which can be produced during smoking, compared to conventional smoking processes.
